Question: How do I level my sub-floor before tiling?
The breakfast area slopes down horrifically. I want to tile it- (currently peel and stick) but I want to level it first. There is sub-floor under the laminate, which is also the basement ceiling.
I know I have to remove all the trim… but that’s where I stop knowing what to do and want to hire someone. This is MUST DIY project, please advise on what to do next?

Leveling the floor usually refers to filling in low spots, not the entire floor as in your case.
If the whole thing slopes, it may very well be from settling (sinking) of the foundation of the house at least in that area. Fixing that is way beyond DIY and seriously expensive. I have seen a second subfloor installed over taper-cut two-by, like 3″ on the low end to ‘zip at the high end, but it just accentuates the off-pitch any any original adjacent flooring.
I would just work with what you’ve got, ignoring the slope, and just apply a nice new floor covering.
